Used as an acidulant, flavouring agent and chelating agent, Malic Acid is a colourless white crystalline powder with a tart, acidic taste. An organic compound, this dicarboxylic acid is an active ingredient in many sour foods and occurs naturally in fruits and some vegetables.
Malic acid is used widely as a food additive to increase acidity without imparting any flavours particularly in soft drinks and foods with fruit flavours or fillings and also as an alternative to citric acid in effervescent powders and products.
