One of the major applications of citric acid is within the soft drinks market where it is used to provide a sour, tart or acidic flavour as well act as a flavour enhancer and preservative.  It is also an excellent, natural pH adjuster to slow or inhibit bacterial growth and is favoured over other acids such as phosphoric acid due to being easier to handle and store.   

In food citric acid is used again as a flavour enhancer and a key ingredient used by many chefs in a variety of recipes to balance off any unwanted naturally occurring sweetness or provide a refreshing tartness. Combined with sodium citrate, citric acid are used as pH adjustment for an optimal gelatine setting in gelatine based deserts and foods. In meats, citric acid helps sustain food colouring and prevents the formation of sliminess or unpleasant smells during the processing. 

By comparison citric acid is found frequently in the cleaning products and detergents markets where it is used as a binding agent to increase dirt and soil removal by improving the properties of the cleaning product.
